At Giegel's Gourmet, we will create a menu based on how your family likes to eat.  The day of your free assessment, tell us about any special dietary needs or diets you prefer: Atkins, South Beach, Mediterranean DietPaleo, Guten Free, Raw, Vegan or vegetarian. 

Meat Dishes & Stews


Steak Tartar:  Shaved pecorino, capers, shallots, celery with toasted crostini

Filet Tornadoes:  Bordelaise sauce braised swiss chard and caramelized pearl onions

New York Steak Au Poivre:  Brandy peppercorn cream sauce Lyonnaise potatoes

Steak Diane:  Beef medallions, shallots, mushrooms, Brandy, Dijon mustard, veal stock, heavy cream, Worcestershire, parsley with rosemary potatoes

Braised Beef Brisket:  Cabernet beef jus with roasted carrots and parsnip

Braised Short Ribs:  Red wine beef jus, roasted butternut squash, carrot, celery root

Italian Pot Roast:  Porcini mushrooms, red wine, celery, onion, carrots, tomato, pancetta served with creamy polenta

German Beef Rouladen:  Thin steaks wrapped around bacon, caramelized onion and pickle Pan fried and simmered in beef jus served with homemade Spaetzle

Beef Bourguignon:  Cubed beef, pearl onions, mushrooms, Burgundy wine

Beef Stroganoff:  Cubed beef chuck, mushrooms, onion, beef jus, sour cream over buttered Pappardelle pasta

Shepherds Pie:  Ground beef, carrots, onion, baked mashed potato

Meatloaf:  Homemade meatloaf baked with caramelized onions served with mashed potato and gravy.

Italian Braciole:  Pounded flank steak stuffed with sage, grated cheese and prosciutto stewed in a hearty tomato sauce

Beef Sukiyaki:  Sirloin, scallion, nappa cabbage, shitake mushrooms, rice sticks braised in a sweet soy glaze.

Mongolian Beef:  Beef, ginger, garlic, scallion, in a sweet soy glaze

Korean Short ribs:  Sweet soy glazed

Beef stirfry:  Carrots, broccoli, onion, peppers, mushrooms, bok choy

Poultry Dishes


Seared airline chicken breasts:  Caramelized pearl onion, Baby carrot, zucchini, celeriac puree and dark chicken jus

Chicken Cordon Blue:  Breaded and pan fried stuffed with Swiss cheese & ham, Dijon cream

Artichoke Chicken:Chicken pieces pan roasted & Deglazed with white wine, lemon, veloute’Crimini mushrooms and artichoke hearts

Chicken Paillard:  Pounded flat, seared and served with arugula salad, orange segments, capers, frisee, citrus vinaigrette

Chicken Provencal:  Saute’ spinach, olive tapenade, baby heirloom  tomatoes

Teriyaki Chicken breast:  Honey, teriyaki, ginger roasted and served over coconut basmati rice and broccolini

Francaise:  Egg dipped pan fried with lemon beurre blanc

Marsala:  Pan seared breasts, Marsala wine, wild mushroom chicken jus

Saltimbocca:  Breasts wrapped with prosciutto and sage, pan seared, Madera wine sauce

Tuscany:  Baked chicken pieces, lemon, garlic, rosemary

Caccaitore:  Chicken pieces simmered in tomato sauce, carrots, onions peppers, Mushrooms, artichokes over yellow rice

Chicken Pot Pie:  Diced chicken, celery, onion, carrot, peas, pearl onion, chicken veloute’ baked in pie shell

Buttermilk fried Chicken:  Served with Mashed potatoes & gravy

Kung Pao:  Diced thighs, sauté with sweet soy, chili sauce, pea pods, onion, red peppers and peanuts

Tikka Masala:  Chicken simmered in tikka masala curry served over couscous

Tandori Chicken:  Greek yoghurt Riata, hummus, toasted Naan

Chicken Tacos:  Shreaded chicken, soft tacos, guacamole and Serrano chilies

Turkey meat loaf:  Caramelized onion, roasted potatoes, peas and baby carrots

Whole Roast Duck:  Purple cabbage & German Spaetzle

Duck a l’Orange:  Roasted whole served with wild Indian rice and Grand Marnier orange glaze

Duck Confit:  Confit duck legs in duck fat, braised salsify, caramelized apple, grapefruit gastric

Whole Roasted Turkey:  Sausage and fig stuffing, cranberry sauce, turkey gravy, mashed potato

West Indies:  Napa cabbage, smoked bacon, raisins, almonds, bananas, madras curry

Jamaican Jerk:  Grilled corn tomato relish

Spaghetti & Italian meatballs:  Served with choice of salad and garlic bread

Spaghetti Bolognaise:  Beef, pork, veal meat sauce, shaved pecorino

Fettucini   Alfredo:  Classic, with seafood or chicken

Garganelli San Daniele:  Prosciutto, truffle oil, peas, grated parmesian cheese, cream sauce

Chicken Tetrazzini:  Angel hair pasta, julienne carrot, zucchini, squash, mushrooms in a white wine cream sauce with parmesian cheese

Spaghetti Carbonara:  Pancetta, onion, white wine, cracked black pepper, egg yolk, cheese

Linguini artichoke:  Chicken, artichoke, mushrooms, sundried tomato, calamata olive, basil, white wine cream sauce

Linguini & Clams:  Classic white wine clam sauce, parsley, chili pepper, butter

Seafood Risotto:  Fresh Fish, clams, mussels, calamari, shrimp, scallops fresh arugula

Mushroom Risotto:  Porcini, oyster, crimini, and morels, truffle oil, shaved pecorino

Rock shrimp & corn Risotto:  Rock shrimp, corn, truffle oil, chives

Tagliatelle Veal ragout:  Braised veal ragout, wild mushrooms, truffle oil, pecorino cheese

Orecciette with rapini and sweet sausage:  Ground sausage, broccoli rapini, tomato sauce, chilies, shaved pecorino

Bucatini All’ Amatricana:  Guanicale, caramelized onion, chili, tomato sauce, pecorino cheese

Lasagne Bolognaise:  Rich 3 meat sauce and creamy Bechamel sauce

Vegetable Lasagne:  Squash, zucchini, portobello mushroom, tomato sauce, ricotta and mozzerella cheese

Baked Ziti Bolognaise:  Ziti baked with 3 meat bolognaise and mozzarella

Baked Stuffed Shells:  Stuffed with ricotta, marinara, baked & covered with mozzarella cheese

Tuna:  Tuna tataki, diakon, ginger lime soy

Tuna rolls:  Sesame seeds, avocado, scallion, lime, cilantro, soy, wasabi on rolls

Grouper Ceviche:  Red onion, peppers, Serrano chilies, cilantro, lime

Steamed mussels:  White wine, fennel or spicy marinara

Clams, mussels, fish:  Green tomato, green curry, lime, coconut milk, cilantro

Scallop Madras:  Seared scallop, fava beans, brown Madras curry butter, balsamic wine reduction

Miso glazed Cod:  Shiitake mushrooms, baby bok choy, sweet soy

Pan seared sea bass:  Creamer potato timbale, asparagus, shittaki, beurre blanc

Grilled swordfish:  Celery root & potato mash, scallion puree, key lime butter

Salmon spice:  Toasted vermicelli, white wine, lemon, tomato, basil, taggiasca olive, saffron broth

Halibut fregole:  Chorizo, fennel, clams, fregole pasta, white wine, herbs

Salmon & corn cakes:  Piquillo pepper aoli, shaved fennel

Peekytoe crab cake:  Celeriac remoulade

Seared grouper:  Taggiasca olives, tomato, capers, sauted spinach

Shrimp scampi:  Garlic, lemon, parsley, white wine, butter, tossed with linguini

Snapper Acacia:  Pan seared steeped eggplant in honey, sherry vinegar, Tomato coulis

Seafood Bouillabaisse Provencal:  Shrimp, mussels, calms, lobster, sea bass, snapper, fennel, saffron, white wine, tomatofish broth. Garlic aioli on baguette

Seafood Paella:  shrimp, clams, mussels, scallop, fish, lobster, calamari, in a saffron, shellfish broth baked with rice, garnished with peas, red pepper, lemon and Jerez

Mahi Mahi:  Teriyaki marinade, grilled pineapple mango relish

Lobster Roti:  Crispy rice cake, Swiss chard, soy lime brown butter

Baked stuffed Maine Lobster:  seafood stuffing, lemon beurre blanc

Pork Dishes


Thick cut Pork chops: Apple compote & brussel sprouts with bacon

Pork Tenderloin:  Hoisin, honey, soy glazed roasted and served over stir fry vegetables

Slow Roasted pork butt:  Carolina spice rub, black eye peas & ham hock

BBQ Pulled Pork:  Slow cooked in BBQ, vinegar coleslaw, baked beans

Slow Braised Latin pork Butt:  Sweet onion Mojo, black beans & rice

Pork Phad Thai:  Sliced pork, prawns, egg, peanuts, bean sprouts, rice noodles

Spicy pork & prawn lettuce wraps:  Red curry, coconut milk, peanuts

Pork Schnitzel:  Breaded & pan fried, Lemon, served with German Spaetzle

Roasted Pork Loin:  Herb and grain mustard marinated, roasted Butternut squash mash, green beans

Baby Back Ribs:  Dry rubbed and slowly braised in beer then glazed with Guava BBQ sauce

Pork loin Medallions:  Pan seared and deglazed with apple brown sauce, Indian Wild Rice 

Pulled pork tacos:  Shreaded lettuce, guacamole, Serrano chile, pickled red onion

Ground Chorizo Empanadas:  Manchego cheese, scallion with mirasol chili syrup

Marsala:  Seared medallions smothered in Marsala wine wild mushroom Demi glaze

Saltimbocca:  Pounded and wrapped with prosciutto and sage, Madera wine sauce

Bolognaise:  Ground veal, vegetables, red wine and tomato sauce tossed with Bucatini pasta

Veal Osso Buco:  Seared and braised veal shanks simmered in Marsala veal Demi glaze, gremolata, creamy polenta

Veal Braciola:  Pounded and stuffed with herbs, bread crumbs, grated pecorino simmered in Sunday gravy

Milanaise:  Pounded and breaded, pan fried, served with arugula salad, shaved Parmesan, lemon

Lamb Shish Kebobs:  Eggplant couscous, roasted pepper, Riata sauce

lamb shoulder:  Caramelized onion, roasted tomato, riata, toasted Naan bread

Rack of Lamb:  Pesto couscous, sundried tomato, raisins, toasted almonds, black olives, lamb jus

Lamb Chops:  Caponata, rosemary roasted fingerling potato

Leg of Lamb:  Crusted with herbs served with roasted root vegetables, mint lamb jus

Tikka Masala:  Chunks of lamb stewed in Tikka Masala curry, Indian basmati rice

Irish lamb stew:  Carrots, celery, onion, parsnips, tomato, Guinness lamb jus

Lamb Osso Buco:  Braised in wine, simmered with tomato sauce and vegetables, Moroccan couscous

Kefta Burgers:  Ground lamb burgers, melted goat cheese, harissa sauce, Naan bread
